Shore to Shore: Local Chefs Bring Signature Dishes To Salisbury
SALISBURY, Md. — In the newest edition of Shore to Shore, local chefs had the opportunity to showcase some of their signature dishes while competing against fellow restaurants.
The Salisbury Area Chamber of Commerce hosted its 17th annual Taste of the Town, bringing together some of the area’s top restaurants for an Iron Chef-style competition.
“We have bacon jam sliders, guys. I make this bacon jam in-house, all from scratch. Cook it down nice and slow and just make that juicy goodness,” said Brew River chef Nikki Maddox.
Maddox brought eight years of culinary experience to the event, pairing savory flavors with a touch of sweetness.
Another chef challenged expectations with gluten-free offerings.
“My number one seller is the sweet potato biscuit. My favorite would be any kind of cake, so probably strawberry crunch cake,” said Krave owner Lisa Dale.
The sweet potato biscuit sparked a sense of nostalgia for some attendees.
“It just reminds me of home. Reminds me of my childhood with my grandparents, with my mom, so it’s super special,” said Derek Jarmon, the City of Salisbury’s business development director.
Meanwhile, one of Salisbury’s newer restaurants introduced visitors to its Mediterranean-inspired cuisine.
“We have a lamb meatball that we make in-house. It’s got a lot of harissa sauce, Mediterranean flavor and lots of Ziggy’s sauce on top,” said Savour chef Phillip Trout.
But Savour wasn’t the only restaurant serving up meatballs.
“We’ve got artisan meatballs in a tomato sauce with fresh-grated Parmesan and fresh-cut basil,” said Mojo chef Liz Krauss. “It’s kind of a longtime favorite among servers. It became really popular with the sauce and just took off.”
Another downtown Salisbury business highlighted its sweet side.
“We were really excited to showcase our donuts so everyone would know how jam-packed we’ve been,” said Brick Row Market owner Alex Scott.
Beyond the competition, chefs said the event was an opportunity to share their passion for food with the community.
“Oh my gosh, I love everybody’s face and just feeding everybody. They’re coming up saying it’s so good. That’s what I’m here for at the end of the day,” Maddox said.
