Foodie Friday: Ocean 13

 

OCEAN CITY, Md. – This edition of Foodie Friday brings the team to Ocean 13, where you’re sure to find plenty of memorable and flavor-filled options on the menu.

“Being a small business and family-owned and operated is very important to us,” said owner Jeremy Brink.

And that’s certainly a sentiment shared by Chef Jason Jones.

“We want quality, and for people to have an experience when they come here. We want them to tell their friends, ‘Come back. Enjoy yourselves,'” Chef Jones said.

Wellington For One

No meal at Ocean 13 is complete without the wow factor, even if it comes in a cute little pastry packet. On this menu, you’ll find a Wellington for one, which starts with a seared filet mignon coated in Dijon mustard. Then, Chef Jones stretches out the pastry dough.

“You don’t want it to be see-through in any place, but you want it to be wider than the meat,” Chef Jones explained.

Then, the cuts are coated in prosciutto and savory mushroom duxelles. Chef Jones rolls up the packet to perfection, slices slots on top, and then gives it an egg wash before thrusting it into the oven.

By the time the Wellington comes out, the steak inside is perfectly cooked. The whole affair is only elevated by topping it with jumbo lump crab meat and a dreamy imperial sauce.

“I love the layer of prosciutto. It just gives a nice pop of saltiness, but that mushroom duxelles is really what ties it all together. It’s so flavorful… You’ve got to get the steak and crab meat together. It’s like the ultimate surf and turf,” said Foodie Friday host Hannah Cechini.

Another Ode to the Oven

Another ode to the oven on this menu is Chef Jones’ crabcakes. They’re nothing to shake a claw at.

“The caramelization that the crab cake got just really amplifies all of those sweet flavors that we love about blue crab, which makes it the king of crabs,” Foodie Photog Mike opined.

Both dishes are dressed up with savory sides, plated by Sous Chef Jackson Lewis. He’s masterful at making the fried brussels sprouts perfectly crispy, and the risotto wonderfully creamy.

“He takes a lot of care to make sure that every plate looks like the last,” Chef Jones said.

“Messiest burgers in Ocean City”

If you haven’t yet mastered your sea legs, don’t worry. You’re in the perfect place to experience a smash burger that will stick in your memory.

We say we have the messiest burgers in Ocean City, and we want to stick with that,” Chef Jones said.

You’re going to want to buckle up for the barbecue short rib smash cheeseburger dressed up with homemade barbecue sauce and balanced on a pillow-y pretzel bun.

“That short rib is just beautifully tender. Tons of flavors… The sauce is definitely sweet, not overly sweet though. It’s got a nice smokiness to it,” Mike said.

Not Full Yet?

And on the off chance that you’re not full yet, Chef Jones has four words for you: french toast bread pudding.

“This bread pudding is the bread pudding, I’d say. It is so rich and dreamy and sweet in all the right ways,” Hannah said.

“That is a beautiful way to end a messy meal,” Mike added.
