Foodie Friday: Tall Tales Taphouse

 

 

PARSONSBURG, Md. – Tall Tales Taphouse in Parsonsburg has a lot to offer, but it’s no lie that all of it is tasty. For this edition of Foodie Friday, host Hannah Cechini and Photog Mike are checking out this eatery’s dishes, made by a talented young chef at the helm.

“When you’re getting hit on a Friday or Saturday night and you’re in the middle of it, you have like ten tickets on the board, and it’s just you and your team communicating with each other, it makes you appreciate who you have with you,” said Chef Melissa Schilling.

Tender Thai Chili Salmon

A big part of that operation is outside in a wood-burning beast. This oven is perfect for preparing any dish. We start with sweet Thai chili salmon, served with roasted veggies and rice.

“It’s a recipe that I was shown, and I enjoyed it so much that I wanted to put it as one of the items that I was adding to the menu,” said Chef Schilling.

The glaze is the perfect pairing for the fish: bright, citrusy, subtly sweet, and a touch of chili that really makes it pop.

“The salmon is really tender,” Hannah said. “It’s got that beautiful, subtle fattiness that you want on a good cut of salmon.”

Mike was a big fan of the vegetables.

“The carrot and the onion, especially, really pick up something special from the heat of that wood fire oven,” Mike said. “You definitely get some more of that caramelization that’s a little harder to get at home in a traditional oven.”

Growing Wings

If you want to share the love with the table, the wings at Tall Tales will help your meal take off. The Foodie team opted for Thai chili lime wings.

“That is just a lovely, subtle sauce,” Mike said. “Little bit of heat, little bit of sweet. Wonderful blend.”

“All of that smokiness is just so beautifully infused into the meat on these chicken wings,” Hannah added.

A Pizza Worth Pining Over

Now, let’s round things out with a honey siracha chicken pizza.

“It’s homemade dough, made typically every morning. And they’re all hand-stretched to order,” said Chef Schilling. The tomato sauce is serious stuff. “It’s salt, pepper, basil, oregano, agave nectar, and a little bit of extra virgin olive oil.”

After the dough is stretched and given a ladle-full of love, it’s done up with a mozzarella blend, siracha, chicken, bacon, and jalapeno slices. A drizzle of ranch brings it all together.

“This is a really tasty pizza,” Hannah said. “The first thing I notice is all of those wonderful bacon-y notes. The dough on the pizza is also really well-developed. It’s just relly light, fluffy, airy, and then the bottom has a nice char on it. The heat from the siracha sneaks up on you a little bit, but the ranch is a perfect counterpoint to that.”
