Foodie Friday: Bub’s Grubs

MILFORD, Del. – The Foodie Friday team is going mobile this week. We’re highlighting a food truck that was started of a passion for community and building character. When the Foodie team visited, Bub’s Grubs was parked in the Milford Tractor Supply parking lot.

Rolling Creativity

Bub’s Grubs has been rolling around Delaware since March, and owner Gary Shirey says nothing has slowed him down since. “I literally built this whole truck. When I got it, it was empty. There was nothing in her,” he said.

And, Gary’s got a creative streak.

“I like different flavors, okay? I like to put different things together, and I have this trick with the mozzarella sticks,” Gary explained. “It’s something about when you bite into it, and the cheese just strings all out.”

Anything but a “Disaster”

One of those cheesy creations is billed as The Spicy Disaster. Foodie Friday host Hannah Cechini, though, thinks it’s anything but a disaster.

“I don’t even know what angle to attack this from,” Hannah said as they handled the hefty handheld. “Man, that is a behemoth right there. So, this is a buffalo chicken cheesesteak with ranch, and I’m pretty sure there are mozzarella sticks hidden somewhere inside of this.”

They say opposites attract, and that’s certainly true of the ranch and buffalo battling it out on top of this cheesesteak. And, it didn’t take long at all for Hannah to find that hidden mozzarella stick.

“It’s like just when you think you’ve gotten enough cheese with the chicken cheese steak, there’s like bonus cheese added on top of that,” Hannah quipped. “Who doesn’t love bonus cheese?”

Meaty and Melty

That’s not the only mouthwatering meal on the menu.

The Juicy Bacon Burger lives up to its name. And it’s never complete unless the cheese has a chance to get good and melty, says Gary. “I always have to melt my cheese on the meal. If I don’t melt the cheese on the meal, I just don’t like how it goes out.”

Foodie Photog Mike asked Gary to add buffalo sauce to his burger.

“This is basically three layers of a sandwich. You’ve got burger, then bacon, then burger. The bacon’s like, ‘No, no. I’m a full member of this sandwich.'” Mike joked. “That’s a nicely seasoned burger. It just has really good character, really good savory notes to it… You are not going home hungry—you and a buddy could probably split this burger and be good for the day.”

Serving Up Encouragement

And while you’re sure to walk away from Bub’s with your hunger satisfied, something you might not be expecting is that every meal comes with extra love. Gary, who has overcome addiction, has made his life’s mission to serve up a smile with every delicious dish.

“It’s all about making those unique connections with people. You never know who you’re feeding or who you’re going to meet,” Gary said. “You don’t get a second chance for a first impression. I say that all the time.

Gary says he loves what he does, and that’s what keeps him going. “Some people don’t love what they do. A lot of people chase the money in this industry. Money comes and goes. The impact you make on people, that to me is what lasts forever.”
