Foodie Friday: Harvest Tide Steakhouse
LEWES, Del. – For this edition of Foodie Friday, we’re checking out a spot that’s perfect for date night, or a gathering of friends and family. Harvest Tide Steakhouse in Lewes has a menu packed full of wow-inducing items. Foodie Friday Host Hannah Cechini and Photog Mike got to dig right in.
Dazzling Dry Aged Steaks
Dry aged steaks are sure to dazzle you at this eatery. The one destined for the Foodie Team’s plates has been waiting for 20 days to be trimmed into a Delmonico.
“I’m going to cut it right in the middle, so we can get a really nice piece,” explained Chef and Owner Danio Samoza as he sliced into the steak. “The longer you dry age, the better it’s going to be. I mean, you can see all the juice and all the water.”
The slab gets a salt and pepper treatment so it can crust up in the pan, before going into the oven.
Super Sides, Savory Seafood
While that beauty firms up, Chef Somoza gets to work on another dish that finds its roots in the ocean. The cod also gets a quick sear before being thrust into the belly of the beast.
The cod comes back out, and gets the imperial treatment, with Chesapeake blue crab meat. It’s served on a bed of risotto, which is completed with red pepper, green beans, asparagus, and a lemon basil cream.
Chef Somoza has also been working on some beautiful sides: carrots, potatoes, and some dinner rolls that will knock your socks off with their honey truffle lavender finish.
“These rolls are the perfect way to kind of wake up your pallet when you start a meal here, because you’re hitting like every single part of the texture and flavor spectrum,” Hannah remarked.
And if you ask Mike, the veggies are equally as exquisite.
“The carrots have great texture,” Mike said. “Nice, subtle sweetness from their time in the pan… The smoothness and the buttery-ness on those potatoes is top notch.”
“Tastes like Delmarva”
Let’s get back to that cod imperial with risotto.
“The fish is fork-tender, super flavorful… It tastes like Delmarva to me, with the fish and the crab, and the Old Bay flavors,” Hannah said with satisfaction. “That risotto is so creamy and lovely, which is really nicely balanced out by the fresh spring vegetables. Those still have a lot of their crunchiness, but they’re still tender.”
“Deliriously good”
And now that it’s rested, and topped with blue cheese, we’re ready to dig into the Delmonico. Four words: melt in your mouth.
“That is a really excellent steak,” Hannah remarked. “That dry aging process really does something special to this meat, in terms of locking in the flavor, and the moisture on the inside of it. And then, when you put it in the pan and the oven, all of that just comes alive again.”
“Beautiful fattiness, beautiful saltiness,” Mike agreed. “If you’re coming here for date night, you could both just eat the Delmonico and you’d be good… Just licking off the fork is deliriously good.”
Ending With a Bang
And when you’ve got a meal like this one, you can only end it with a bang. Harvest Tide’s towering chocolate cake is sure to pack that punch that you’re looking fore.
“I’m 5’6″, and this cake is almost as tall as I am. Yeah. This is Mount Chocolate Cake right here,” Hannah joked.
“For the people counting at home, this is two more layers than a Smith Island cake,” Mike added.
