Foodie Friday: Seedbol Kitchen

 

REHOBOTH BEACH, Del. – Founder of Seedbol Kitchen, Dmitry Gorin, is on a mission to get Delawareans to eat healthier, while delivering that nutrition with a huge punch of flavor and color.

“Start eating healthier. That’s going to help you so much in the future for you, for your kids, for your family,” Gorin said. “This is why we’re here, and that’s why we’re trying to the best for our guests here.”

Vibrant and Nutritious

Healthy doesn’t have to be boring. In fact, it can be delicious and vibrant. Everything served at Seedbol Kitchen is gluten, sugar, dairy, and egg free. And, it’s served up in a bowl, designed to get guests to play with their food.

“First, we’ve got some lemon grass rice noodles. We’re going to mix it with some brown rice. The noodles are our guests’ favorite,” said Seedbol team member, Dan. “We’ve got broccoli and sweet potatoes.”

Dan, and fellow team member Kirill, are busy building a bowl for Foodie Photog Mike. Next, they add in chipotle chicken and red pepper hummus.

“Now, we want to add some freshness with our vegetables that come from local farms,” Dan said as he moved down the line.

Those veggies would be Thai chili cucumbers, and basil tomatoes. They’re dressed with fresh chimichurri sauce. “Chimichurri has a cilantro parsley base with a little bit of pepper. So, it gives it a little kick. Pretty nice,” Dan explained.

Personal and Perfect

Top it with sunflower seeds, and you’ve got a bowl full of combinations, perfect for Foodie Photog Mike.

“All of the herbs and spices have been really well-handled. They’re just present enough to enhance the main piece,” Mike said. “Chimichurri and that chicken is definitely a winner… “Every combination is subtle and only enhancing. There are so many choices. You could probably eat here every day of the week for a month, and not have the same thing twice.”

And, what better way to wash it all down, than a house-made blueberry ginger kombucha? “That is refreshing and that will wake you up,” Mike said with a sip. “It’s also nice and subtly fizzy.”

“Perfect balance”

Bowl number two, for Foodie Friday Host Hannah Cechini, starts with spinach and ponzu lemon grass noodles. When you eat together every week, you tend to develop the same tastes; Hannah chose many of the same delicious toppings as Mike; however, they chose shrimp for the protein.

“The shrimp kind of has this sweet and spicy thing going on, and I am really digging it. It’s the perfect balance of the two,” Hannah said.

Often, protein is the star of the dish. At this eatery, however, everything has a moment to shine. The ponzu lemon grass noodles, flavorful. And, the Thai chili cucumber, refreshingly crisp with a sneaky heat. The red pepper hummus is masterful.

“That’s just a really well-made hummus. There’s a lot of awesome, roasty red pepper notes in there,” Hannah said. “You could put it with any of the things on this plate, and it’ll match perfectly.”

And when it comes to the more roasty and toasty items, they’re handled with the perfect amount of TLC.

“The cauliflower is really well-cooked and tender. It still has that subtle crunch to it, but it’s very much a nicely oven-roasted vegetable,” Hannah said. “I love sweet potatoes to begin with. But, when you cook them perfectly and they have that caramelized flavor from the oven, it’s really just such a treat.”

Spreading the Love

Dmitry plans to open up more locations in the Wilmington area, and will be franchising the concept in the near future. He’s really excited to bring healthy eats to the rest of the First State.

“People started realizing how important healthy food is in their diet. They started getting more and more from us,” Dmitry said. “I found about so many problems in the market with food. It’s a lot of junk food, low quality food. That was the reason why I started this business.”
