Making Roasted Beans & Tomatoes on Cooking with Lynn

Roasted Beans & Tomatoes
Prep Time: 30 minutes
Serves: 6-8

Ingredients:
1 can of chickpeas, rinsed
1 can of cannellini beans, rinsed
2/3 of a can of diced tomatoes
1 tablespoon of olive oil
2 sticks of rosemary
salt & pepper as needed

  1. Preheat oven to 375 degrees.
  2. Combine chickpeas, beans, and tomatoes in a large baking dish.
  3. Add olive oil and mix until combined.
  4. Add rosemary sticks.
  5. Bake beans for 20 to 25 minutes, stirring once after the dish has cooked for 15 minutes.
  6. Season to taste with salt and pepper.
  7. Enjoy!
