Making Egg Salad Sandwiches on Cooking with Lynn
Egg Salad Sandwich

Prep Time: 10 minutes
Ingredients:
2 hard boiled eggs, peeled
1/2 cup of Greek yogurt
1 teaspoon of Dijon mustard
1/2 teaspoon of olive oil
pinch of salt & pepper
2 slices of sprouted bread
handful of microgreens (optional)
- Mash hard boiled eggs in a bowl.
- Add greek yogurt, dijon mustard, olive oil, and seasoning. Mix until combined.
- Add egg mixture to one slice of your sprouted bread.
- Add microgreens on top of your egg mixture to give an added crunch if desired. Complete sandwich with second piece of bread.
- Enjoy!
