Diet Foodie Friday: SOBO’s Winery & Beerstro
SALISBURY, Md. – It’s time again for Foodie Friday, and today is our special menus edition. This time, we head to SOBO’s Winery and Beerstro.
Different Diets
While Wine and Beer may not be part of your daily diet, Executive Chef Ryder Wurzbacher of SOBO’s Wine and Beerstro says they have something that can fit everyone.
“Yeah, you know people are on a lot of different types of diets these days, you know. So, you really have to be accommodating like that… We have different ways you can add and remove things. You know, I like to just talk to people and just find out what they’re looking for. If it’s something we can do, we’ll do it.”
Poke Bowl
Gluten-free, dairy-free, eggless, you’re in luck! Chef Ryder describes their Poke bowl, telling us is just the feast you need and if you set aside the creamy ahi tuna is a vegan favorite as well.
“This is a great healthy dish, especially for the summer. It’s going to be our sushi rice topped with ahi tuna, some house-made spicy mayo and just lost of nice fresh veggies.”
Drizzled with their garlic teriyaki sauce, it was a fresh, fun take on a traditional Hawaiian dish. I had to try. “It’s very light, it’s very tasty, fresh. Even though the tuna has some cream on it you don’t get a heavy feeling. I really enjoy it.”
Nashville Cauliflower
They use gloves and keep it very clean to avoid any cross-contamination, and Chef Ryder says even if it’s not on the menu, they make plenty of accommodations. Sous Chef Ms. Rose took us on a southern ride with their Nashville Cauliflower- fried in rice flour and tossed in their spicy buffalo sauce.
This gluten-free, vegan treat was all this country girl needed. “This is definitely giving “healthy hot wing”. It’s delicious, it’s crunchy. It’s served with blue cheese but I’m sure you could get ranch if that’s your flavor- but I’m really digging this…”
It was so good, our Photo Kolby had to stop me from eating the entire thing! “And the sauce is good. It is spicy a little bit you know, but it’s definitely giving “Nashville” for sure.” Okay, so it was hot, but still delicious!
Berry Burrata Salad
This next dish was a perfect cool-down. Chef Ryder explains why it’s such a hit! “Well, Burrata is a great cheese, it’s wrapped in a fresh mozzarella, so that’s a popular cheese these days. Especially on a salad. We like to get nice, fresh, seasonal berries- usually from the market, dress it up with that and a champagne vinaigrette dressing.”
And that Berry Burrata Bite was more than a salad, it was a symphony. SOBO’s Wine and Beerstro really showed out. “We’ve got some strawberries, some pears some walnuts… This is very interesting, you know, I’ve never tasted anything with all these flavors popping but In between the champagne vinaigrette with the strawberry and burrata- that’s one flavor itself but when you start chewing on a pear with the walnut it just adds something different.”

They are located at 1015 Eastern Shore Dr in Salisbury and are open Tuesday through Saturday 4:00 pm to 10:00 pm.
