Making Roasted Root Vegetables on Cooking with Lynn

Roasted Root Vegetables
Serves: 6-8
Prep Time: 50 minutes

Ingredients:
2 beets, chopped
2 parsnips, chopped
1 turnip, chopped
1 rutabaga, chopped
3 carrots, chopped
2 sweet potatoes, chopped
1/3 cup of balsamic vinegar
3 tablespoons of olive oil
salt & pepper, other seasoning as desired

  1. Preheat oven to 375 degrees.
  2. Combine all chopped vegetables in a bowl with balsamic vinegar and olive oil. Mix together.
  3. Pour onto your baking sheet/pan, and sprinkle with salt and pepper.
  4. Bake for 35 to 40 minutes, stirring halfway through.
  5. Enjoy!
