Roasted Beans & Tomatoes
Prep Time: 30 minutes
Serves: 6-8
Ingredients:
1 can of chickpeas, rinsed
1 can of cannellini beans, rinsed
2/3 of a can of diced tomatoes
1 tablespoon of olive oil
2 sticks of rosemary
salt & pepper as needed
- Preheat oven to 375 degrees.
- Combine chickpeas, beans, and tomatoes in a large baking dish.
- Add olive oil and mix until combined.
- Add rosemary sticks.
- Bake beans for 20 to 25 minutes, stirring once after the dish has cooked for 15 minutes.
- Season to taste with salt and pepper.
- Enjoy!
