Making Egg Salad Sandwiches on Cooking with Lynn

 

Egg Salad Sandwich
Serves: 1
Prep Time: 10 minutes

Ingredients:
2 hard boiled eggs, peeled
1/2 cup of Greek yogurt
1 teaspoon of Dijon mustard
1/2 teaspoon of olive oil
pinch of salt & pepper
2 slices of sprouted bread
handful of microgreens (optional)

  1. Mash hard boiled eggs in a bowl.
  2. Add greek yogurt, dijon mustard, olive oil, and seasoning. Mix until combined.
  3. Add egg mixture to one slice of your sprouted bread.
  4. Add microgreens on top of your egg mixture to give an added crunch if desired. Complete sandwich with second piece of bread.
  5. Enjoy!
