Foodie Friday: Embers
OCEAN CITY, Md. – It’s not just the food at Embers in Ocean City that looks nice, but the ambiance of the entire restaurant.
From the gorgeous view of the ocean to the colorful dishes, this coastal gem has a lot to offer, and WMDT’s Leila Weah was ready to unlock it all.
Chef Anthony Eppolite was in the kitchen, preparing two dishes on different ends of the spectrum, both equally delicious.
“We have our braised short rib; this is a beef cut boneless. We do about 6-7 oz and then braise it for about 4-5 hours on 200 degrees, 250 degrees, and then pretty much shove it in the oven,” said Eppolite.
Each dish gets a buddy on its plate, and for this one, Eppolite paired it with mashed potatoes and green beans.
“Take a scoop of the potatoes right in the corner, right here, then go in with our green beans right next to it, and then we top it with our casserole sauce,” said Eppolite.
Next on the chefs list, their bestselling rock fish, caught right in their back yard. To ensure its fantastic flavor, they dry age the fish for 3-4 days.
“It really takes out the impurities of the fish, so all that slime and moisture comes out in the process of dry aging, and it actually gives it a little more longevity,” said Eppolite.
The fish sits right on top of a mountain of yucca fries and their fragrant mint and pea smash. Eppolite garnished both dishes with some greenery.
“You wouldn’t think that short ribs would be a meal to eat in the summer, because it’s beef, it’s kind of heavy, but this is paired very well with a lot of different flavors, a lot of different sauces,” Leila said, eyeing the short rib.
“There’s so many different flavors on this plate, so your taste buds are going to taste a little bit of everything,” said Leila, nodding to herself with a smile.
Let’s see how the rock fish stacks up.
“We’re in Ocean City, of course we have to have seafood. Why wouldn’t we have seafood out here,” said Leila.
“Hearing it on the menu, I don’t know if I’d try that. But tasting it, this is a home run,” Leila said with a smile.
