Cooking with Lynn: red lentil curry
WMDT – We are back in Lynn Matava’s kitchen.
Lynn is a Nutrition Educator with the University of Maryland Extension, and she has a recipe for red lentil curry.
This plant-based meal is packed full of nutrients especially fiber and protein.
We’re told that lentils cook faster than any other bean and this entire recipe only takes 30 minutes to complete.
Lynn used a couple tablespoons of coconut oil which is high in saturated fat, 2 garlic cloves, and shredded ginger to add a bit of flavor.
