Made On Delmarva: Jessica’s Fudge House

Mitchell Rosinski, the owner Jessica's Fudge House has locals and visitors going 'nuts' over his fudge.
"99.9 percent of the customers are happy, they are just looking for something sweet to eat," says Ronsinski.
Jessica's Fudge House has been an Ocean City staple since the 70's. Rosinski is the fourth owner carrying out this sweet legacy.
"It was originally named after the original owner's granddaughter who still stops in at least once or twice in the summer," says Rosinski.
He still cranks out the classic recipes, but occasionally switches things up.
"We do a maple walnut, a salted caramel, dark chocolate caramel sea salt, we are trying out a cake flavor this year," says Rosinski.
One of the flavors that always keeps people coming back for more is their peanut butter fudge. Rosinski showed 47 ABC how me makes it.
The batch starts with a vanilla base, dehydrated cream, water, and lots of butter. He then mixes in sugar and peanut butter.
The fudge is mixed in a kettle that is similar to a double boiler.
"Our fudge tends to be a little creamier than other ones just because of the way the kettle whips it," says Rosinski.
After it's cooked down, it's spread inside a pan to cool.
The fudge cools down for 24 hours, before it's cut into rich squares and ready to be enjoyed!
