Sabor Latino: Vittles Food Truck

Meet Josh, Kirsten, and Jeremy. The trio that is driving around town and serving locals their favorite hand held food.
“We’re loving it. We’re having fun,” says Josh Mason, the owner of Vittles Food Truck.
This family business came together a few months ago when Kirsten Mason received a call from her husband, Josh.
“Saying Kirsten we are opening a food truck, Jeremy is going to be our chef and this is actually going to happen,” says Kirsten Mason.
With the help of their cousin Jeremy, who is working as their chef, their business plan hit the road. This family-business decided to go with the name Vittles, a word that is near and dear to Josh.
“When I was a child my mom always used to say lets grab some vittles, would you guys like to have some vittles. It’s kind of boring when you say let’s grab some food so we call it vittles and everyone loves it,” says Mason.
Jeremy showed us how to prepare one of their most popular menu items, fish tacos. He starts by heating up tortillas for the tacos and then places butter in a hot pan. He then puts a fillet of Mahi fish in the pan and covers it with a blackening seasoning. Jeremy then adds a little water to the pan, he says that helps keep the moisture in the fish and prevents it from burning. He tell us it takes approximately 5 to 7 minutes to finish cooking.
Jeremy then goes on to assembling the tacos. He places cabbage over the tortilla followed by spicy mayo and fresh mango pico de gallo, and tops them with house-made red onions, and it is ready to eat…Buen Provecho!

Conoce a Josh, Kirsten, y Jeremy. El trio que está manejando esta comioneta de comida.
“Nos encanta. Nos estamos divirtiendo,” dice Joshua Mason.
Este negocio empezó hace unos meses cuando Kirsten Mason recibió una llamada de su esposo, Josh.
“Diciendome, Kirsten, vamos abrir un troque de comida. Jeremy va ser nuestro chef,” dice Kirsten.
Con la ayuda de su primo, Jeremy, que está trabajando como el chef, abrieron el negocio.
Y ellos decidieron llamarlo ‘Vittles’, una palabra muy especial para Josh.
“Cuando era un niño mi madre me decía, vamos garra vittles. Es aburrido decir, vamos a buscar comida. Entonces decimos vittles,” dice Josh.
Jeremy nos llevo a la cocina donde me enseño como preparar tacos de pescado. Primero él calienta tortillas y pone mantequilla en un sartén caliente. Luego pone el pescado en el sartén y lo sazona.
Jeremy le agrega poquita agua al sartén para que no se reseque el pescado. Él dice que toma 5 a 7 minutos para cocinarse.
Jeremy luego pone repollo sobre la tortilla, tambien mayonesa picante, y pico de gallo de mango. Cuando el pescado esta cocinado, se lo agrega a la tortilla y para terminar pone cebollas rojas en vinagre. ¡Y están listos para comer, buen provecho!
